Stir Fry Shrimp and Spinach
 

This is a very simple and tasty, low-carb meal. You know rarely follow directions in a recipe because I believe everyone should use their own creativity and change things up as they like.  Here are the basics of my Stir Fry Shrimp & Spinach.

  • Sauté tomato, onion, garlic, and oregano in butter. 
  • Add mushrooms
  • Add balsamic vinegar, shrimp, salt, and pepper.
  • Add spinach and wilt.
  • Add Parmesan cheese to the top.
  • Stir and serve
