I made Cream Cheese Enchilada Pie for dinner tonight. It’s layered like a lasagna 🙂 lots of mmmm’s in our house! You can use flour or corn tortillas. The flavors are VERY different. We make a pan of each since our girls are allergic to corn.
Mix:
16oz softened cream cheese.
8oz sour cream
2 tsp salt
1 tsp pepper
4 garlic cloves crushed
1/4 cup fresh cilantro
1 cup chicken broth
2 cups shredded cheddar cheese
4 cups shredded chicken.
In another bowl mix:
1 (10oz) can Rotel diced tomatoes & green chilies
1 can El Paso enchilada sauce.
Grease the bottom of a pan and just layer like a lasagna. Cut 10-12 flour tortillas in strips. Add chicken mixture. Add sauce. Add tortillas Repeat again. Then top with more cheese, and fresh scallions.
